Here is a nice little Mexican dish to spice up your dinner plate.. Thanks again, MawHawg!!


TACO PIE

Prep/Baking Time: 35 Minutes

Yield: 4-6 servings

1 lbs. lean ground beef

1/2 yellow onion, chopped

1 cup shredded cheddar cheese

1/2 cup bisquick or all purpose baking mix

1 cup milk

2 large eggs

1 package dry taco mix


Prepare a 9" pie plate, sprayed lightly with Pam.

In a non-stick skillet, add beef, onion and taco mix. Saute until beef is no longer pink.

In bowl, mix eggs well and add milk.. Add bisquick mix and whisk to blend with no lumps. Fold in cheese.

Into pie plate, add meat mixture and pour liquid over top. Bake at 400 for 25 minutes. Cool 5 minutes and slice into wedges.


Topping: This is not necessary, but adds flavor and looks.

Combine 1 cup. reduced fat sour cream with 1/3 cup very thick salsa

1 7 oz. can Green Giant Nibblets corn with peppers

Mix well together and dollop on top of wedges.

This may be garnished with sliced black olives; diced green chilis, avacodo slices, fresh diced tomatoes.

Variations:

Try using the Mexican Shredded cheese by Kraft or Sargentino's.. You may add the corn and chilis or olives into the meat mixture and top with just sour cream with the avocado mixed in.

Kids love this and like to garnish.
