Weekend Brunch Spinach Quiche
1 Pie Crust (10-inch)
1 8 oz package cream cheese
1 cup milk
4 eggs (beaten)
1/4 cup onion (chopped)
1 Tbsp margarine
1 10 oz package frozen spinach (cooked and drained)
1 cup shredded Swiss cheese
6 slices bacon (cooked and crumbled)
Dash of pepper
Bake pie crust in 400 degree oven for 12 to 15 minutes or until lightly brown.
Combine cream cheese and milk in saucepan; stir over low heat until smooth. Gradually add cream cheese mixture to eggs, mixing until well blended.
Saute onions in margarine. Add onions and remaining ingredients to cream cheese mixture; mix well. Pour in pie crust.
Bake at 350 degrees 35 to 40 minutes or until set.
