Here is another wonderful Spanish Rice recipe submitted by Nobunaga, who was one of the "first" Foodies from FoodTalk... Spanish Rice goes well with so many dishes... Very delicious!

*Spanish Rice*


Ingredients


2 cups white rice

2 cups green bell pepper diced

2 cups red bell pepper diced

1 cup diced celery

1 1/2 cup white or yellow onion diced

1 can of 12-16 oz diced tomato preferably with green chilies.

1 tbsp butter

1 tsp salt

1 tsp black pepper (optional)

1 tsp cumin (optional)

1 tsp tabasco sauce (optional)



In a large skillet on low to medium heat, add butter and then add diced vegetables (you can dice them however finely you like).

Cook until softened (I generally cook until it gets semi-soft. I like the vegetables a little crisp)

Add rice and can of diced tomatoes (not drained) salt, and the optional ingredients - pepper, cumin and tabasco sauce.

Stir together mixing throughly and cook on low heat for about 20 minutes occasionally stirring.
