Hippoluver has sent me this very special recipe.. It is one of the best lasagna recipes I have ever tasted!!! Try it!! Your tastebuds are in for a real treat!!


Seafood Lasagna


1 package of lasagna noodles, cooked

1/2 pound of shrimp (can use any one you prefer)

1/2 pound of mushrooms, cleaned and quartered.

1/4 pound fresh scallops

1 pint cream

8 ounces of mozzarella cheese

3 tbsp margarine

3 tbsp corn starch

1 crab, cooked and picked clean

1 tbsp of Italian seasonings (dry and crushed basil and oregano leaves mixture)

1 to 2 tbsp of pureed garlic.

16 ounce container of small curd cottage cheese

1 package of frozen spinach, thawed..

Instructions:

Boil the lasagna according to package instructions.. Drain and set aside...

In a frying pan, saute the scallops, shrimp and crab in margarine or butter..

Add mushrooms, Italian seasoning and garlic... Let simmer...

Mix the corn starch with the cream and pour into the frying pan to thicken..

Spray a casserole dish with Pam Vegetable Spray... Line it with a layer of lasagna noodles and pour part of the prepared filling on the top of noodles...

I like to have 2 layers... The second layer is small curd cottage cheese and 1 package of spinach, drained and water squeezed out.. Mix these together..

Place over noodles. Then another layer of noodles and then sauce and cheese.

Top off the next layer of noodles with sauce and the mozzarella cheese..

Cover with foil and bake in 375 degree oven for about 30 - 45 minutes..

Let rest for 10 minutes before cutting into it.

Wonderful with a salad and sour dough french bread and Zinfandel wine.
