This recipe is from Finland.. It was a recipe that my mother used to make.. I have converted it so that it can be made with a bread machine..

Finnish Coffee Bread

( Pulla )


8 ounces of warm Milk mixed with 1 1/2 teaspoons of ground Cardamom and 1 1/4 teaspoons of Salt..

1 Egg

2 tablespoons of Butter or Margarine

3 cups of Bread Flour

2 1/2 tablespoons of Sugar

2 1/2 teaspoons of Yeast

Put ingredients into bread machine in the right order, according to manufacturer's instructions.

Put on dough setting. While dough is mixing, preheat oven to 200 degrees for second rising.

(If you have a place in your home that is warm and draft-free, you do not have to use oven for second rising. However, temperature must be between 75 degrees and 85 degrees.)

Turn off oven 5 minutes before you put dough into the oven for rising. Let it rise for 30 minutes..

If oven cools down too much, turn oven back on to 200 degrees for a few minutes..

When dough is ready, lightly oil your counter.

Put dough ball on the counter, cut dough into 3 even strips, then braid them together...

Put braided dough on greased cookie sheet and put into warm oven to rise. Make sure the oven has been off for at least 5 minutes. Let it rise for 35 minutes or until doubled in size...

Then turn oven on to 350 degrees and bake for 30 minutes or until golden brown...

When bread is ready and while still hot, brush on a coffee and sugar mixture (3 parts sugar to 1 part coffee) on the bread crust. Then sprinkle sugar on top of coffee/sugar glaze.

Note: If you do not want to use coffee, use hot water instead..
