This "Quick and Easy" recipe was sent to us from MawHawg.... It's sounds so good and it is a different way to prepare potatoes...Everyone's favorite food!! Enjoy!!



Potatoes Romanoff

Prep/Cook Time: 1 hour

Yield: 6-8 Servings

Light spray with Pam a 9 x 13 glass baking dish or non-stick pan.

1 large package Ore-Ida Country Style Hash Browns, thawed.

1 pint small curd low fat Cottage Cheese

1 Teaspoon yellow prepared Mustard

1 Tablespoon dried Onion Flakes

1 1/2 Teaspoons Season-All

1/2 Cup Fat Free Sour Cream (Low Fat can be used)

1/2 Cup 1% Milk (2% can be used)

8 Oz. Shredded Muenster Cheese (colby/jack mix may be substituted)

In a blender, combine in order: Milk, Mustard, Sour Cream, Cottage Cheese, Season-All & Onion. Blend to smooth consistency.

In a bowl, add potatoes and cheese, pour mixture on top and toss to incorporate well.

Pour into baking pan, cover with foil..
Bake at 350 for 40-45 Minutes

This is an excellent side dish for brunch.

Accompany with: Sauteed Ham Slices with Apple rings and Scrambled Eggs.

This is an excellent Main Dish by adding: 2 Cups Diced Ham pieces (great way to use leftover ham from Easter Dinner) OR 8 ozs. thinly sliced Fat Free Turkey Kielbasa.
