This recipe was sent to me by Nani. This is the same recipe as the Hawaiian Sweet Bread. It's my favorite bread! Perfect when toasted and buttered with jelly... Yummy!
Portuguese Sweet Bread (Hawaiian Bread)
2 pkg active dry yeast
1/2 cup warm potato water
3 tbsp sugar
1 cup mashed potatoes
1/8 tsp ginger
1/2 cup milk (can use evaporated milk if desired)
2 tsp salt
1 3/4 cup sugar
1/2 cup melted butter
8-10 cups flour
Dissolve the yeast in the warm potato water. Stir in the 3 tbsp sugar, the mashed potatoes and the ginger.
Cover and let rise til double.
Scald the milk, add the salt and cool til lukewarm.
Beat the 3 eggs with the 1 3/4 cup sugar. Stir this into the yeast mix.
Add the melted butter and mix well.
Stir in 2 cups of flour and then the milk. Add 2 more cups of flour and mix well.
Add enough of the remaining flour to make a stiff dough.
Place on a lightly floured board and knead in enough of the remaining flour until dough is smooth and elastic (about 8-10 min).
Place in a greased bowl, turning to grease the dough on all sides.
Cover and let rise until double in size. Butter and flour 4 9x5x3 in loaf pans (or you can use round pans if desired).
On a floured board, divide dough into fourths, shape into loaves and place in prepared pans.
Cover again and let rise til double.
Brush top with egg wash and bake in a 325 oven for 45 min or til done.
