ORANGE PECAN BUTTER
YIELD: 1 1/4 Cup
1 cup butter, softened
1/2 cup pecans, finely chopped
1 1/2 Tablespoons Orange rind, finely grated
1/3 cup Powdered Sugar
Mix butter at medium speed with mixer until very creamy and smooth.. Add in sugar and continue to blend to incorporate.
Fold in rind and pecans and stir to mix.
Place mixture in the center of plastic wrap and roll tightly and twist ends of wrap to shape mixture into a log...
Refrigerate for 1-2 days to chill thoroughly.
Unroll and let sit for 1/2 hour prior to serving. Refrigerate any left overs.
Will keep for several weeks. Excellent spread on bagels, english muffins, hot biscuits or french toast.
