NO BAKE CHEESECAKE PIE
Prep: 15 min. Set time: 2-4 hours
Yield: 6-8 slices
This is for a LEMON/LIME PIE
1 9" prepared pie crust (Keeblers Shortbread is best, but reduced fat Graham Cracker may be used.
2 8 oz. packages of Reduced Fat Cream Cheese, softened
1 3 oz. package of Lemon Jello
1 8 oz. carton Yoplait Key Lime Yogurt
1 8 oz. carton Low Fat Cool Whip, thawed
In mixing bowl, add softened cream cheese, jello, the juice from 1/2 a lemon. Blend with a mixer until very well blended, approx. 2 mins. Fold in cool whip and thoroughly blend.
Pour into pie crust and smooth to flatten top. Mix thoroughly the carton of yogart and drop by tablespoons on top to spread gently over entire top.
Slice 3 thin pieces of lemon and cut them in half, twist to form angel wing effect and place in evenly spaces around edge of pie, Do not sink into pie, as this is to hold up the sarah wrap that covers top.
Place in refrigerator for 2-4 hours prior to serving.
** Variations: Your jello, yogurt and fruit should always match. For example.. Strawberry, Peach, Lime, Mixed Berry (my favorite)
** DELETE: Lemon Juice from above variations... and Do Not Add any other liquids.
If you choose to make Banana, Use 2 very ripe bananas plus 1 Tablespoon Sugar and 1 pkg. Knox Unflavored Gelatin mix, top with Strawberry/Banana Yogurt.
This is a very Low Calorie Dessert...
Make during the spring/summer when many fresh fruits are available for topping accents.
