Thank you for giving us this one Maw!! This is what Mawhawg says about one of her favorite recipes:

"I am the taster for every hush puppy made and this is my ultimate favorite and I can eat buckets of them with catfish nuggets"....

Prep/Cooking Time: 20 minutes

Yields 18 3" rounds

1 cup self rising white cornmeal

1/2 cup self rising flour

1 Tablespoon granulated sugar

1 large egg, beaten

1/2 cup beer

1/2 cup onion, finely diced

1 small jalapeno, seeded & finely diced

(**Remember to wear plastic gloves or bags when working with peppers)

32 oz. bottle canola oil (made be strained and   reused for other fryings)

If you don't have a deep frier, you may use a dutch over or 10" deep chicken fryer pan. Heat your oil to temperature of 375 degrees

Mix cornmeal, flour and sugar together, make a well in center and add egg and beer, mix together with a fork until well mixed and moistened. Add in onions and pepper and blend thoroughly, trying not to over mix.

Drop by large rounded tablespoons in hot oil, fry until golden, flip so entire hush puppy is golden crusted. Drain on paper towels and serve immediately. Serve with deep fried catfish nuggets or shrimps and a tangy coleslaw.
