This recipe is definitely different!! It has so many ingredients that make it mouth watering!!! Great for the whole family...


Spicy Harvest Pie

1 frozen pie shell, deep dish will do.

2 cups of shredded apples. ( 1 cup of granny smith and 1 cup of red delicious work well)

1 cup shredded zucchini

1 cup shredded carrots

1/2 cup of walnuts or pecans (optional)

3 tbsp of flour

1 1/2 cup firmly packed brown sugar

1/4 cup margarine or butter, melted

2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp salt

1 tbsp lemon juice

1 tsp vanilla extract

1 tsp grated orange peel (optional)

2 eggs, beaten

Prepare pie crust according to package instructions for 2 crust pie using 9 inch pie pans.

Heat oven to 425 degrees.

In a large bowl, combine:

Apples, zucchini, carrots, nuts and flour. Toss to coat.

In a medium bowl, beat brown sugar and margarine/ butter until well blended.

Add cinnamon, nutmeg, salt, lemon juice, vanilla, orange peel and 2 eggs: blend well.

Add margarine mix to fruit mix and mix well together.

Spoon filling into pie crust lined pan. Bake for 40 to 50 mins or until deep golden brown. Cover pie with foil during the last 15 mins of baking to prevent excessive browning.

Serve warm with whipped cream. Refrigerate left overs.

Make 8-10 servings.
