Here is a wonderful recipe from GrandmaDragon.. This is what she says about it...


"My sister makes this and it is fantastic!! And I'm not fond of green thingies, lol!!"


BROCCOLI CORNBREAD


2 boxes of cornbread mix ( she usually uses the little blue boxes of cornbread mix, but you can use whatever you are use to using, or make it from scratch...)

4 eggs

1 1/2 sticks of butter, or margarine

10 oz. pkg. of frozen chopped broccoli

10 oz. cottage cheese

1 medium onion, chopped


Melt butter in 9" x 13" baking pan. Pour melted butter into a mixing bowl & add all other ingredients. Pour mixture into pan.

Bake 40 minutes at 350 degrees. Will be moist in center.

These directions leave out a couple of steps. You have to thaw the broccoli. Also while you are melting the butter in your baking dish, you should be sure to coat the sides of the dish to prevent it from sticking.

My sister always pre-cooks the onion also; it's never noticiable in the finished product.

I like onion flavor, but I'm not fond of crunching down on a raw piece of it. She puts some cooking spray in a skillet & cooks it until it's totally limp, clear, & no longer noticeable in the dish.
