"Ok, where do we all meet for our pot-luck buffet dinner and all-night gab session? (Don't we wish!... 8-))


I'll bring this dessert! LOLOL!! Be sure to look at the end of this recipe for the "Irish Coffee Pie" version.



Brandy Alexander Pie



9-inch baked and cooled pie crust (your choice)

1 envelope unflavored gelatin

1/2 cup cold water

2/3 cup sugar

1/8 teaspoon salt

3 large eggs, separated

1/4 cup Cognac

1/4 cup Créme de Cacao

2 cups heavy cream, whipped (1 cup is for garnish)



Sprinkle gelatin over cold water in a sauce pan. Add 1/3 cup sugar, salt and egg yolks. Stir with a whisk to blend. Heat over low flame until sugar and gelatin dissolve. Remove from heat.

Add liquor and chill until mixture starts to thicken. Beat egg whites until stiff, adding 1/3 cup sugar. Fold into thickened mixture. Whip cream until stiff. Fold half the whipped cream into pie filling. Garnish with the remaining whipped cream.

Chill for several hours or overnight. To make this into an "Irish Coffee Pie", substitute strong cold coffee for water and 1/2 cup Irish Whiskey for the other liquor.
