I love the smell of basil.. It is so homey.. MawHawg sent me this wonderful recipe that I know the whole family will enjoy!!
Prep/Cooking Time: 30 minutes
Yields: 3-4 scant Servings
2 skinless chicken breast, cubed OR 4 skinless chicken thighs, cube enough chicken to make 2 cups
1 can reduced fat chicken broth
1 can diced tomatoes
2 cloves garlic, minced
1/2 teaspoon tabasco sauce
1 tablespoon fresh basil, chopped fine OR 1 teaspoon dried crushed basil
1 cup petite peas, frozen
1 3/4 cups minute rice, uncooked
In 3 quart non-stick sauce pan, add diced chicken and sautee over medium heat until no longer pink..
Add broth, tomatoes, garlic, tabasco, basil and peas. Bring to boil..
Add rice and mix to blend. Cover and let stand 10-12 minutes.. Fluff with fork and serve.
Serve with french bread or hard rolls.
