Pinklucy has sent me this excellent recipe.. I love pancakes and bananas!! This recipe has turned an ordinary pancake breakfast into a gourmet feast...


With that Rum Syrup to top it off, this is sure to start your morning off with a zing! LOL!! It will probably keep you in a great mood all day too.. LOL!!


Banana Pancakes And Rum Syrup

1 1/4 tsp baking powder

1 cup all purpose flour

1/2 tsp cinnamon

1 cup milk

1/4 cup lightly packed brown sugar

3 tbsp corn oil

1 large egg

1 tsp pure vanilla extract

1 pinch salt

2-3 mashed medium bananas (1 cup) 1 tbsp butter, melted

Combine dry ingredients into large bowl..

In a separate bowl, combine the milk, sugar, 2 tbsp oil, eggs, vanilla.

Add dry ingredients..

Fold bananas into batter, let it set, loosely covered, for 25 minutes.

Combine melted butter with 1 tbsp of oil, place non-stick skillet over medium heat and pour butter and oil into skillet... Wait until they bubble..

Pour pancake mixture into skillet and let it cook until bubbles show through pancakes..

Turn pancakes over and cook for 35 to 45 more seconds...

RUM SYRUP:

2 cups your favorite maple syrup

2 tbsp unsalted butter

3 tbsp dark Jamaica rum

4 cup pourable microwave-safe container

Cook in microwave on medium for 2 minutes..

Serve over pancakes..
